Chocolate Covered Corn Flakes

Ingredients:

Good quality chocolate, chopped into small pieces
Cornflakes (plain, not sugar-coated)

Directions:

1. Melt chocolate in a double boiler or a microwave.

2. Add the cornflakes to your evenly melted chocolate.

3. Stir until every cornflake is covered.

4. Spread flat onto a sheet pan or plate. Chill for 15-20 minutes.

5. Break into smaller pieces and store in an airtight container.

Moist Banana Bread

Ingredients:

½ cup of butter, cubed
1 cup of brown sugar
¼ teaspoon of salt
2 eggs, large
2 of teaspoon vanilla extract
1 ½ cups of over-ripe bananas, mashed
½ cup of sour cream or yogurt
2 cups of all purpose flour, sifted
1 teaspoon of baking soda

Directions:

1. Sift together flour and baking soda in a bowl. Set aside.

2. Using the paddle attachment of your mixer, cream together butter, brown sugar and salt until mixture is fluffy. Scrape sides and bottom of the bowl with spatula.

3. Add in eggs one at a time.

4. Add in vanilla extract, mashed bananas and sour cream. Mix well.

5. Stir in flour mixture just until blended. Do not over-mix.

6. Pour batter into loaf pans. Fill until ¾ full.

7. Bake for 30 to 45 min (depending on the size of your load pan) or until the toothpick comes out with a few crumbs clinging to it.

8. Cool for a few minutes and unmold. Slice and serve.

Cheese Cupcake

INGREDIENTS

  • 1/2 cup Butter, softened
  • 1/2 cup Sugar
  • 4 medium Eggs
  • 2 1/2 cup All-purpose Flour
  • 1 teaspoon Double-Acting Baking Powder
  • 1/4 teaspoon Salt
  • 2 cans Condensed Milk
  • 1/2 cup Vegetable Oil
  • 1 cup Cheddar Cheese, shredded, half to mix in, half for topping

Makes about 24 -30 cupcakes

PREPARATION TIME : 15 minutes

COOKING TIME : 25 minutesPre-heat oven at 350°F;

1 Mix together the dry ingredients and sift. In a separate container, mix together the condensed milk and vegetable oil.

2 Cream butter with sugar until light in color. Add the eggs one at a time.

3 Add alternately the dry and wet ingredients, starting and ending with the dry, BUT DO NOT OVER-BEAT.

4 Stir in the cheddar cheese.

5 Using an ice cream scoop, portion the mix on lined cupcake pans and bake for 25 mins or after testing for doneness (see below).

Coconut Macaroons

INGREDIENTS

  • 3 1/2 cups Freshly Shredded Coconut, packed tightly
  • 1/2 can (14 oz)Sweetened Condensed Milk
  • 2 tablespoon Cornstarch
  • 1 teaspoon Vanilla Extract
  • 1/4 tsp Salt
  • Pinch of egg yellow food color

       Optional: 

  • 4 oz. semi-sweet chocolate morsels,  melted 


Pre-heat oven at 350°F;

1    Wring out any excess liquid from the fresh coconut, it must be just damp and not dripping wet. 

2   Mix together all the ingredients.

3   Using an ice cream scooper, portion the coconut mix and mound on a lined baking pan.

4 Bake for 18 – 20 minutes or until golden brown.

5   Serve as it is or dress it up by drizzling melted chocolate on top.

Chocolate Chip Cookie

Ingredients

  • 2 1/2 cups all-purpose flour
  • 1 cup softened butter
  • 1/2 cup white sugar
  • 1 cup brown sugar
  • 2 pieces raw eggs
  • 1 teaspoons vanilla extract
  • 1 teaspoon baking soda
  • 1 teaspoon salt
  • 2 cups semisweet chocolate chips
  • 3/4 cup chopped walnuts

Instructions

  • Preheat oven to 350 degrees Fahrenheit.
  • In a mixing bowl, combine all-purpose flour, salt, and baking soda. Mix well and set aside.
  • On a separate mixing bowl, put in butter and beat. Gradually add both sugars while beating.
  • Add-in the vanilla extract and eggs (one piece at a time) while beating.
  • Gradually add the flour, salt, and baking soda mixture and beat until all the ingredients are well mixed.
  • Put-in the chocolate chips and chopped nuts. Fold until the chips and nuts are well incorporated.
  • Arrange parchment paper in a baking sheet. Scoop and drop the mixture on the parchment paper. Note: try to press the mixture a little bit to make the cookie flat. This will also give you room if you want to place extra chocolate chips on top of the cookie.
  • Place inside the oven and bake for 7 to 9 minutes.
  • Remove from the oven and place in cooling racks.
  • Serve. Share and enjoy!
